Vegan Banana Bread

Ingredients:

4 Very Ripe Bananas
1 Red Apple Peeled and Grated
1/2 Cup Frozen or Fresh Raspberries
1/4 Cup Melted Coconut Oil
1 + 1/2 Cups Wholemeal Self Raising Flour
1/2 Cup Rolled Oats 
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
2-3 Teaspoons Cinnamon
3/4 Cup Crumbled Walnuts

Method:

  • Preheat the oven to 180°C and grease a loaf tin with melted coconut oil
  • In a mixing bowl sift the flour in with the oats, baking powder, baking soda, cinnamon and walnuts
  • In a separate bowl mash the bananas with a fork until relatively smooth. Add in the grated apple, frozen raspberries and the coconut oil and stir gently
  • Fold the wet ingredients into the dry ingredients and combine well 
  • Pour the mixture into the already greased loaf tin and decorate the top with a couple of walnuts
  • Bake for 30-40 minutes, or until golden on top and a knife comes out clean
  • Delicious served with a spread of 100% natural peanut butter
